Cooking with Matías Aldasoro at Casa del Visitante

17.ENE.11, 12:07 Caminosdelvino.com shared with Matías Aldasoro, chef from Casa del Visitante, the test of summer 2011 menu, a pleasure that we take at the recently awarded like the best "Winery Restaurant" within the framework of the acknowledgments given by Cuisine & Vins magazine.

Very calmly, as one who invites his own friends to eat, Matías received us, with the difference that at that time, eighty place-settings in the restaurant were being served (maximum capacity). As if this were not enough, a few hours later he was going to serve 300 workers from the winery staff, in its year-end dinner.

The first activity we had was having lunch, we proved the creole menu: many creole pies and grilled meat (great point, juicy) with cool and warm salads paired with wines from the winery and like an ending, a great dessert (apple and vanilla cake) in happy harmony with the Tardío Santa Julia
After knowing the kitchen, where Matías introduced us his team, who seemed as calmed as himself, we began testing the menu: the taste and our views on the "right combination " or the one that we considered like the most appropriate. It was not easy, Matías's style has the spices of the brand of Santa Julia: a touch of challenge and many innovation.

Take note of the menu of eight steps that he proposed:
GAZPACHO OF ROSA MOSQUETA AND CRACKLINGS OF INFLATED GARLIC
Santa Julia Brut Rosé

MALAMADITO (Malamado Viognier, Cedron, mint of our garden and rocks of lemon)

VIZCACHA IN TORRONTES PICKLE WITH SYRUP OF CHERRIES, PISTACHIOS, KUMQUATS AND OUTBREAKS OF BEET.
Zuccardi Serie A Chardonnay Viognier

ARGENTINE REINTEPRETATION OF THE SUSHI WITH BARBECUE SAUCE OF MALBEC
Zuccardi Textual Ancellota

OUR PASTA OF VIOGNIER FILLED OF CHEESE OF GOAT AND CHESTNUTS OF UCO'S VALLEY, FRESH FIGS, SAUCE OF GRAPE AND WARM FOAM OF CARROT
Zuccardi Serie A Malbec

MELON AND MINT SODA
SYMPHONY OF CHERRIES AND BLACK OLIVE
Alma 4 Bonarda

DUO OF TOMATO AND WATERMELON (ICE-CREAM OF WATERMELON AND TOMATO ON WILD RICE AND INFLATED AMARANTH, VARIETY OF HOPEFUL CHERRIES, GRANITA OF TOMATO, FROZEN STUMBLES OF WATERMELON AND CHIPS OF TOMATO)
Santa Julia Chenin Dulce Natural

Excellent experience of pairings, offered in only a few restaurants.

Our gratefulness to Matías because of his generosity to share this novelty and to introduce to us his kitchen and make us possible to know a bit more of his style and see how he chooses his products to surprise in every step.
