The Wine Cellar
In December 1999, the Codorníu Group realised its historic wish to be present in Argentina, with the purchase of 306 hectares of vineyards in the department of Luján de Cuyo, in the province of Mendoza, Argentina's wine-growing region by excellence. Some months later, in July 2000, the building of the wine cellar began. Today, Septima is a modern wine cellar, built following the traditional Mendoza system with vineyards planted in the shadow of the Andes.
Architecture: The "Pirca" Technique
Septima building was planned respecting the techniques used for centuries by the native Inca tribes of the region. Specifically, they used the "Pirca" technique which consists of cutting and piling up natural stones from the Andes mountain range. This is the same building procedure that the Huarpes Indians, one of the Inca tribes established in the area, have used since ancient times to build the walls of their homes and sacred places.
Septima currently has 100 hectares of vineyard located at 1,100 metres above sea level. The Septima vineyard is located on practically flat land, characterised by its scarcity of water and clearly continental climate. The climatic characteristics of this region are conditioned by the presence of the Andean mountain range.
For the aging of the wines, the cellar has 1,500 Bordeaux barrels, a stock which must be
increased over the next few years. Septima's current production is around 900,000 bottles per year, although the cellar has a capacity to produce up to 1.3 million.
Today, Septima produces two types of wine: a range of wines made up of generic wines, Septima Malbec – Cabernet Sauvignon and Septima Chardonnay Semillon, and another made up of grape varieties, Septima Malbec, Septima Cabernet Sauvignon, Septima Tempranillo and Septima Syrah. The cellar also produces a sparkling wine elaborated following the Traditional Method, María Codorníu, the composition of which is 80% Chardonnay and 20% Pinot Noir.
Septima has also been producing a reserve wine made with the Cabernet Sauvignon and Malbec varieties since the middle of 2004.
Although absolutely Argentinean in their conception and production, Septima wines are born with the commitment of crossing borders and entering the international markets of the European Union, Eastern Europe and the whole American continent. Currently, wine sales are distributed in the following way: 20% of the production is destined for the national market and the remaining 80% for export.
Septima has a large room where social or business events can be held. The capacity of the room is of 220 people and has an adjoining terrace, which enlarges its capacity up to a maximum of 350 people. It is located on the second floor of the winery, where there is a splendid view of the Septima vineyard. Events can be held every day of the week.
